Butternut Squash Lasagna

Squash is one of the freshest produce items you can get this season. This butternut squash lasagna is the perfect way to warm up and provide a small twist on a classic dish.
Ingredients:
- 1 butternut squash
- 4 tbs. butter
- 1 pack of lasagna noodles, cooked
- 3 cups milk
- 1 tbs. basil, chopped
- 3 cloves garlic, minced
- 2 tbs. flour
- 8 oz. mozzarella cheese, shredded
- 8 oz. mascarpone cheese
- 2 cups spinach, wilted
Instructions:
- Heat oven to 350 degree and grease a 9x13 inch pan.
- To make the butternut squash sauce, cut in half and remove the seeds. Place cut-side down on a cookie sheet and bake until soft (20-30 minutes). Once soft, remove the insides of the butternut squash and place into a blender and add garlic, butter, and milk. Blend until smooth.
- To assemble the lasagna, spread a thin layer of the butternut squash sauce on the bottom of the 9x13 inch pan followed by 6 lasagna noodles, sauce, dollops of mascarpone, mozzarella, noodles, sauce, and spinach. Repeat until the dish is full and finish off with a sprinkle of mozzarella.
- Bake at 350 for 45 minutes and enjoy!
